Bootjack Meal Plan 11/4 – 11/11
Last week’s meal plan was a bit hit and miss. The Peanut Ginger Noodles with Roast Chicken tasted like a poor man’s pad thai and we ate it just because we were hungry. The salad turned out okay, not amazing, and by the end of the week we realized that we just couldn’t handle another stew. So, I turned the Slow Cooked Provencal Beef Stew into a very flavorful roast which we ate with fluffy mashed potatoes, gravy and a nice green salad. This also fed us for several days in different forms and made great sandwiches on my bread.
This week could be baby-having-week, but life goes on and we must eat. There’s no guarantee he will be here Thursday, his due date. I am loosing my desire to make much more than a grilled cheese sandwich, but I think I’ve still been able to come up with a doable plan for the week. Assuming I don’t go into labor.
Japanese Curry Rice

Beef Tacos with a Green Salad
A simple, quick, easy to prepare meal that I can throw together in 20 minutes. Marinating the beef first makes it pretty darn great. The key is to thinly slice the meat after cooking and heat the tortillas over the gas range so that they are slightly charred.
Ingredients: beef (any cheap thin cut), corn tortillas, onion and cilantro, salsa, lime, and mixed baby greens.
Kale with Vermouth Raisins and Pine Nuts and Prosciutto Parmesan Pasta
